Potato bacon soup

It’s not secret that we love eating and cooking in our home! 

I am also a huge sucker for reality tv! One of my current favourites is Master Chef junior. My love for cooking and this show have been passed down to our oldest daughter. After school on Monday she insisted we play “master chef kitchen” so I obliged and let her help with dinner! 

This potato bacon soup is super easy andalso delicious! 

Ingredients:

9 small to medium potatoes

1 small onion

1 pack of bacon

1 bullion cube (chicken or veg will work fine) 

6 cups of water, 1 cup of milk  

Salt, pepper, garlic flakes, all to taste. 

  
First thing you want to do is cut up bacon into cubes, and sauté in a big pot. Once cooked to your liking take prices of bacon out and leave the grease. 

While your bacon is cooking, dice up onions, peel potatoes and cut into cubes. 

  
Once you have removed bacon, add onion to the bacon grease and sauté. You’ll notice the base getting dark, feel free to add a splash of white wine to deglaze pan.  

 
Now you are going to add the water, potatoes, seasoning, and half the bacon back into the pot. 

  
Bring to a boil and let simmer until the potatoes are nice and cooked! 

  
You can choose to mash up the potatoes for a more rustic soup, but I prefer to use an immersion blender and have our soup nice and smooth! 

Make sure you stir the pot a few times while cooking to make sure nothing gets stuck to the bottom.

Keep burner on low, until you’re ready to serve. 

  
Use the left over bacon to garnish with some shredded cheese. 

This was enough to feed our family of 4 and have leftovers for the week.

Treadmill, training, changes 

What a crazy week!! Right before Christmas we found out our dream house was going up forsale!! We’ve put in our offer and knew we would have to wait for the new year to list our house! Well that time is now, and last week we spent what feels like every spare second prepping for listing day, which is today!!! On top of that I have started my marathon training cycle! Truth be told, I’m terrible about following race plans, but I have vowed to race this year to the best of my ability, and to do that I need to train properly! 

We had some very cold days last week. So I took my runners and headed to the gym for treadmill runs, not ideal, but better than nothing. I’m not sure about you, but I am always waaaay slower on the treadmill, which is messing with my mental game! 

I’ve decided to try out a few new things while training! 

1. I finally downloaded “serial” the podcast season 1, and it really helps make time go faster!! I almost don’t want it to end! 

2. Trying out new fuel! I had my first “Gu” the other day and I must say I’m now a convert! It went down much easier then other gels I’ve tried, and it tasted pretty  good! 

3. I typically run in the same shoes, but decided to try out my mizuno soft long let distances, still not sure how I’m feeling about it! 

4. I got my first pair of pro compression socks! I’m also really liking them! And they come in so many great styles! After a few days of wearing them, I bought an other three! (Thanks grab bag special) 

I’m also getting back into doing lifting, I find for myself I run faster when I’m doing weight training along side running! Post more about that an other day! 

Here’s to planning on conpleting this training cycle with focus and enthusiasm! Only about 6 more weeks until my first race of the year!   

Resolution Time

With the new year here it only makes sense to talk a little about resolutions!! 

I know we all typically make them, and then after the excitement and hype of January is gone we seem to forget those things we’ve resolved to do! 

What I have done in past years is set out specific things I want to do. For instance instead of saying I want to read more, I’ve set out an actual number, last year I wanted to read 13 books, and for those wondering, I did! Plus add on 4 audio books. This year I am upping the anti and want to read 16 books, and I will add 5 audio books! 

My fitness goals are pretty specific too. “Be healthy” is too vague. Last year my goals were to run a 5k, 10k, 15k and half marathon! I again was able to reach all those! Plus a bonus 5k race! This year again I am not settling for the same, I have set a 1000 total Kms for the year, and want to run a 5k, 10k, 2x half marathons and hopefully 2x full marathons. Again, those are my minimums, I will most likely add to the races. I want to push myself mentally and physically, and show that you can do whatever you set your mind too! In a perfect world I would PR and BQ on my second full marathon, but I have a lot of work to do before I hit that goal! 

I have been a Christian for basically my whole life, and am a little ashamed to say that I have yet to read the bible in its entirety! So with the guidance of she reads truth, bible in a year plan, I’m going to get it done this year! The goal for me is not to read it to read it, but really to dive in deep and study the word. We’ve also been going through “The Story” at our church, so it’s a great accompaniment too! 

I would say I’m still pretty amateur at blogging and social media, but my goal is to keep plugging away and just grow! It’s not all about the followers ( though I really love and appreciate those who are) but it’s also a great outlet for my runners mind! 

I have never picked a work of the year, but this year I’ve decided to pick one that’s been on my heart, CONTENTMENT!  It’s so easy to get caught up in other people’s lives (real talk friends), to compare what they have, how many followers, likes, features they’ve gotten.  watching other people’s highlight reals can make me feel pretty crappy sometimes, but I have to remember that their stories are not mine! I know Cliche but “you can’t compare your start to someone’s middle”.  I have been blessed with what I’ve been given, I’m going to really work on being happy and thankful for it all! 

I’m working on 1000kms and 1000 written things I am thankful for this year!!! 

In the end the only thing that matters for 2016 is having more Jesus in my life, if I have Him than all the rest will come according to His perfect will for my life!
