Friday is here!! This week seemed to just fly by! Mostly because it was a short week, and we have been doing so much around the house!
I thought before the weekend officially arrived, and you all went out to get your weekly groceries I would share one of our current go to meals, that also acts as a hubby’s “Lunch 1” for the week.
Chicken Mozzarella Meatballs
What you will need,
2 packs of ground chicken or turkey (or roughly 1lbs)
1 Cup of bread crumbs ( or you can use 1 cup of ground oats)
1/3 cup of parsley (more if you desire)
2 cloves minced garlic ( less or none if you prefer)
Salt and pepper to taste
coconut oil ( or preferred oil for cooking)
Finely chop Parsley
Put all ingredients into a bowl
Heat pan on stove, with some oil
Once all ingredients are combined, add a small amount to pan, cook, and ensure seasoning is to preference, add more if needed
Roll mixture into like sized balls. You should aim for 24. Larger meatballs take longer to cook, if you are short on time, make them smaller.
While rolling, heat oven to 350′
Brown in pan.
Add enough marinara sauce to cover bottom of oven safe dish
Once meatballs are all browned put them in dish, coat with more sauce and cook for about 25 min.
Check to make sure they are cooked through
Add cheese on top if desired, and bake for 5min or until cheese is melted and bubbling.
Serve with your favourite side dish!
