Food Friday!!!

Happy Friday everyone!!! The sun is shining and its already a hot one today! I could not be more excited.

With summer quickly approaching, I thought I would share one of my favourite side dishes, Pasta Salad!

The thing with it, is that it is so easy! Pick your noodle, pick your toppings, and pick your dressing! Cook, refrigerate, mix and done!

But for those of you who are more inclined to following a recipe, here is my latest go to!

Ingredients:
about half a package of pasta
1 cup red pepper
1 cup yellow pepper
1/2 cucumber
red onion to taste ( a couple thinly sliced sections)

Dressing:
1 cup of fresh basil (add more, or less depending on your taste preference)
1 cup of fresh parsley
1 avocado
1 clove of garlic ( you can opt to leave this out)
4 tbs red wine vinegar
1/4 cup evoo
salt and pepper to taste

Put all ingredients in food processor and blend until smooth.

The dressing will be thick, but it is perfect for coating the pasta and veggies.

Typically the first thing I do is put the water on the stove to boil, and then get the pasta in. I always salt the water, and never rise the pasta!

While the pasta is cooking, I prep and cut veggies, and get the dressing started.

Now depending on if you are in a serving time crunch or not, once the pasta is cooked, I drain the water off, put it in my serving bowl, and either place it in the freezer or let cool on the counter.

Once the pasta is cooled off, add your veggies, and your dressing mix, let it rest in the fridge for at least a few minutes, and when the rest of your dinner is cooked, your side dish is good and ready!!
