Happy Canada Day to the Canadians, and almost Happy Independence Day to my American friends!
What better way to celebrate a long weekend than with friends, family, food and FIREWORKS!
We are jam packing our weekend with lots of family fun, and of course wanted to share some of my favourite food for bbq celebration!
Potato Salad
This is a staple and also a party favourite! I just made a small batch this time, but recipe is easily adjusted, just add more or less ingredients!
8 russet potatoes, chopped
2 eggs
2 stalks of celery
3 heaping tbs of mayo
1tbs of mustard
Salt and pepper to taste
1/4tsp of paprika
Boil potatoes and eggs, until potatoes are soft
Chop celery
Rise potatoes, and add to bowl
Put all ingredients in bowl
mash and mix
add more mayo as needed
Set in fridge to cool
Pasta Salad
1 box of pasta
2 Peppers
6 mini bocconcini
handful of grape tomatoes
6 tbs Red Wine Vinegar
1 tbs white truffle oil
3tbs extra virgin olive oil
Handful fresh basil
Salt and pepper to taste
Boil pasta, and let is cool
Chop peppers, tomato, and cheese
Once pasta is cooled, add all ingredients to bowl.
Mix and let stand in fridge until it is time to serve
Holiday cocktail
Freeze Raspberries (or strawberries) and blueberries
Once frozen add to the bottom of a champagne flute, pour champagne over and enjoy!! Use Gingerale for kids!
Serve with your favourite main and you are all set to celebrate the long weekend, patriotic style!!
