One of our favourite things to do during the summer is to go strawberry picking. It is pretty awesome to be able to get out into the field, and pick your own food, and take it home to be able to enjoy.
As a family we try to focus on healthy eating, and feeling our bodies with the good stuff, as opposed to eating just junk. I find it really helpful for our girls to see and know where their food comes from, and see it change into meals or treats, and this has really helped them to be well rounded eaters, who enjoy lots of types and tastes of food.
I thought I would share our strawberry picking day, and what we changed these delicious berries into! We ended up picking almost 7lbs of berries, mom fail, I forgot they only take debit for over 10$ so we picked more than anticipated. However, this enabled us to make tarts, and jam, and have fresh berries all week!
The easiest way to turn strawberries into a tasty treat/ dessert, is to buy or make angle food cake, cut up your berries and top it off with a whip cream, I prefer coconut milk whip! It is so good!!
We also turned the berries into tarts! When time allows, I prefer to make my own crust, but this time we wanted something quick, and bought pre-made ones. While the oven was cooking we cut about 2 cups of strawberries, 1 cup of rhubarb, added 2 tsp of vanilla, t tsp cinnamon, 1 tsp flour, half a lemon juiced, 1/4 cup brown sugar. Mixed them together and filled out tart shells. Then let them back for about 30min at 375 (follow pie or tart shell baking directions)
I wanted to try making some Strawberry Jelly, that would pair with cheese, more savoury then sweet. So I took 4 cups of strawberries, half a jalapeño, half a lemon juiced, and 1/4 cup of sugar. High heat until boiled, and a slow simmer until it became like jelly! (be mindful that it doesn’t burn). Easy as that! I canned them, so we could enjoy the preserves all summer!!
