This is one of the most temperamental winters I can remember having in a long time. Snow storms, to feels like -25 celsius to rain and green grass. It is no wonder that the kids have colds we can’t beat, and our moods are gloomy.
If you heaven’t heard of Hygge yet, you are in for a treat! It is a Danish word (pronounced hue-gah) is a feeling or mood that comes from taking genuine pleasure in making ordinary everyday things simply extraordinary; whether it’s making coffee a verb by lingering over a cup to a cosy evening in with friends to lighting a candle with every meal.
This soup for me is embracing hygge!
Ingredients
1 heaping tbsp coconut oil
1 med. onion, diced
1.5 cup celery, diced
3 large carrots, diced
1 sweet potato
3 large cloves garlic, minced
½ tsp sea salt
freshly ground black pepper to taste
¾–1 tsp curry powder
1 tsp paprika
1tsp turmeric
¼ tsp dried thyme
2 cups dry red lentils
7 cups water
1.5 tbsp of better than bullion veg. stock
2½–3 tsp fresh rosemary, chopped
2 tbsp apple cider vinegar
Rinse lentils.
Add all ingredients to crockpot, cook on high for 4 hours. After you will have a soup that will leaving you feeling warm inside.
