Have I mentioned before how much I love soup? Because I do! It is one of my favourite fall meals.  This soup love might steam from my childhood, where my Grandma would cook up the most delicious soups to be served before the actual meal. It is part nostalgic, and also because you can basically throw anything into a pot with broth and make a meal!

Potato bacon soup

It’s not secret that we love eating and cooking in our home! 

I am also a huge sucker for reality tv! One of my current favourites is Master Chef junior. My love for cooking and this show have been passed down to our oldest daughter. After school on Monday she insisted we play “master chef kitchen” so I obliged and let her help with dinner! 

This potato bacon soup is super easy andalso delicious! 

Ingredients:

9 small to medium potatoes

1 small onion

1 pack of bacon

1 bullion cube (chicken or veg will work fine) 

6 cups of water, 1 cup of milk  

Salt, pepper, garlic flakes, all to taste. 

  
First thing you want to do is cut up bacon into cubes, and sauté in a big pot. Once cooked to your liking take prices of bacon out and leave the grease. 

While your bacon is cooking, dice up onions, peel potatoes and cut into cubes. 

  
Once you have removed bacon, add onion to the bacon grease and sauté. You’ll notice the base getting dark, feel free to add a splash of white wine to deglaze pan.  

 
Now you are going to add the water, potatoes, seasoning, and half the bacon back into the pot. 

  
Bring to a boil and let simmer until the potatoes are nice and cooked! 

  
You can choose to mash up the potatoes for a more rustic soup, but I prefer to use an immersion blender and have our soup nice and smooth! 

Make sure you stir the pot a few times while cooking to make sure nothing gets stuck to the bottom.

Keep burner on low, until you’re ready to serve. 

  
Use the left over bacon to garnish with some shredded cheese. 

This was enough to feed our family of 4 and have leftovers for the week.
