Meatless Quesadilla

I have been wanting to cut down on our meat intake lately.  We probably eat some for of meat almost every meal, the exception usually being breakfast.  That is a lot of meat base protein being consumed, and for health and environmental reasons, I feel that our family would benefit from cutting back! 

Luckily, there are some really great alternatives for meat products.  I recently saw a post by Jillian Harris on transition to become more plant based, and she used mushrooms to replace ground meat in a meat sauce, check it out here.

Such a great idea, I thought that I would try it out and make some Mexican food! While Jillian Harris food photos put mine to shame, I will still share my recipe with you!

Black Bean Mushroom Quesadilla’s

Ingredients

450g of mushroom
1 can black beans (rinsed)
half a pack of taco seasoning ( you can add the whole thing, but half is my taste preference)
1tbs of butter
Cheese
Tortilla shells

Directions

Chop mushrooms into small pieces
Add butter into frying pan, and add mushrooms
Saute, until slightly cooked
Add black beans
add taco seasoning
Depending on how your mushrooms have reduced, add a couple tbs of water to help the seasoning coat the”meat”

Once the “meat” is cooked, put on tortilla shell in pan, add grated cheese, “meat” more cheese and one more shell on top. cook in pan for 1min low heat, flip and cook again.
Serve with your favourite toppings: salsa, avocado, lettuce, sour cream. The options are endless!!
